 Post subject: Home-made Healthy Bread

Wild Rice Fennel Seed Bread

1 pkg active dry yeast
2 c. warm water (105-115f)
1 tsp. sugar
1 c. cooked wild rice
2 tsp. fennel seed
1 1/2 tsp. salt
5-5 1/2 c. bread flour
Oil (enough for working surface and to brush loaves)
Cornmeal (enough to cover baking sheet)

In a large bowl dissolve yeast, sugar and warm water. Let stand 5 mins. (Yeast will start to foam)

Stir in wild rice, fennel seeds and salt. Add flour 1 c. at a time until soft dough starts to form. Beat until dough becomes "satiny".

When dough is too stiff to beat cover and let stand 15 mins.

Sprinkle work surface with flour and knead dough adding more flour till dough is not sticky.

Turn dough into greased bowl. Cover and let stand until it rises - double size.

Turn dough onto lightly oiled surface. Divide dough into 4 equal parts and shape into long, slender loaves.

Bake on sheets sprinkled with cornmeal at 400f for 20-25 mins.brushing with oil once during baking.
