Not exactly the most healthy of choices, but Ritz has whole wheat crackers now, so maybee this is good for an occasional indulgance. This is my favorite way of preparing lobster as it is less messy than boiled lobster, and the stuffing is delicious.
Take a lobster (preferrably one > 1.5 lbs) lay it on it's back and stroke its tail towards the tail. This'll make it's tail straighten out.
Then drive a shart pointed knofe in between where the claws are (sternum).
Then cut all the way down through to the end of its tail. Basically split em down the middle.
Now take all of the guts and juice and dump them in a bowl.
Mix in the bowl 1/2 to 1 packet of crushed Ritz crackers.
Also mix about 2-3 tbsp of melted smart balance or butter if you prefer.
Stuff the lobster with the crackers.
Bake in oven at 350 degrees F for 35-40 minutes.
