I decided I was going to go through my refrigerator and either throw out or use up anything that had been in there...the frig amazingly gets to overload capacity at least once a month.
I had a left over eggplant and some red peppers.I needed to use. I ended up making somewhat of a Ratouille dish with these.
I peeled the eggplant, cut it up in bite-size chunks, and steamed it most of the way. While it was steaming, I sauteed onions, red peppers, and garlic in olive oil.
I then added the eggplant to the sauteed veggies, along with a can of cut up tomatoes, some red wine, and oregano, salt and pepper, letting it cook down.
I served it over some left over pasta I had in the frig, with freshly shaved parmesan cheese.
I had also decided to use up my Smuckers Natural Peanut Butter that was in the frig as well, so I made Peanut Butter Bread with my bread maker. I added cranberries, raisins, and chopped almonds, and substituted 1 cup of whole wheat flour of the 3 cups needed. Also added a little oatmeal and olive oil.
I served the bread with our dinner.
Dessert was the rest of an almost empty container of lite vanilla yogurt, with the left over peaches, and rest an almost empty jar ofraspberries natural jams...Peach Melba.
It was great and I cleaned out my frig.
